PEANUT BUTTER CUPS
Ingredients
- 200 g dark chocolate
- 1/3 cup peanut butter
- 2 tbsp. coconut oil
- 1 tsp. vanilla extract
- 1 tbsp. maple syrup
- sea salt
Instructions
Put the muffin cases into the muffin tray
- Melt half the chocolate in the microwave or using the bain-marie method
- Take a spoon of melted chocolate and pop it into each muffin case.
- Move the muffin case around until the chocolate forms an even layer on the bottom - this is the base of your peanut butter cup
- Pop these into the fridge or freezer for 10 minutes to set.
- Do your kitchen challenge.
- When you're done with your kitchen challenge, make the peanut butter filling.
- Melt the coconut oil and mix it with the peanut butter, vanilla, maple syrup and a pinch of salt in a small bowl.
- Take the muffin tray out of the fridge and pop a spoon of the peanut butter mixture into each muffin case. Bang the whole tray on the table a couple of times and that should even out the peanut butter in each cup.
- Back into the fridge with them and melt the other half of your chocolate.
