Hidden Veg Burger

These are a great way to get the veggies in without you even noticing!. These burgers are best baked in the oven so they don’t fall apart but they can be finished off on the bbq - this is Ollie’s favourite way to eat them!

Equipment: Blender (or grater) large bowl, chopping board, 1 oven tray lined with paper, and a knife

HIDDEN VEG BURGER

Ingredients

  • 3 slices wholemeal bread
  • 1 courgette
  • 1 carrot
  • 1 small onion
  • 1 cup spinach
  • 1 tbsp oregano
  • 1 tbsp rosemary
  • 1 tbsp tomato puree
  • 400g minced beef
  • 1 egg
  • burger buns,
  • cheese, tomato slices, lettuce (optional)

Instructions

  1. Blitz bread and throw into large bowl
  2. Peel carrot, chop in half
  3. Peel onion and chop in half
  4. Chop courgette in quarters
  5. Blitz carrot, onion and courgette
  6. Throw into large bowl, add spices, tomato puree and meat
  7. Mix well with hands
  8. Make a well and crack egg into mixture, mix thoroughly
  9. Form burger patties and place on tray
  10. Refrigerate for 10/15 mins or longer
  11. Remove from fridge and bake for 20 mins approx
