Healthy Easter Hot Cross Bunn"ies"!
You’ll love this easy Easter recipe from Aileen Cox Blundell of Baby Led Weaning.
It’s a great one to make with the kids for Easter weekend breakfasts or a simple, tasty Easter themed snack. Mine are not quite as pretty as my mate Aileen’s (sorry Aileen!), but the kids loved them!
It’s a very basic self-raising flour/yoghurt dough - 1 cup of each. I normally use plain Greek yoghurt but today I used our fav @gleniskinsta vanilla and coconut Greek style yoghurt for extra sweetness.
Then I followed Aileen’s recipe using spices, raisins and some maple syrup to sweeten the dough.
I rolled the dough into balls (badly), added a bit of extra dough for ears, egg-wash and in the oven at 180 for about 15 minutes.
You could leave it at that or you could attempt to make them look even scarier (mine I’m referring to!) by using dark chocolate and a tooth pick to give them features!
Regardless of how mine looked, the kids scoffed them and I will (or the kids will!) 100% be making these again.
Healthy Easter Treats
Ingredients
- 1 cup self-raising flour
- 1 cup Greek yoghurt (I used @gleniskinsta )
- 1.5 tsp spices - I used @grahamherterich blend but you could use 1 tsp. cinnamon and 1/5 tsp. allspice
- 2 tbsp raisins
- 1 tbsp maple syrup
- Egg wash
- Dark chocolate to decorate
