Leftover Easter Egg Cookies

Do you have loads of chocolate lying around the house after Easter? This recipe is a great way to use up leftover Easter eggs. Or any other chocolate you might have!

In a recent survey with my subscribers, 50% of them said their children got between 6 and 20 Easter Eggs each. That sure is a lot of chocolate.

Now I do subscribe to the idea of letting them manage their own chocolate but, if they are looking for an easy, fun recipe to make and use up some of that Easter Egg chocolate, then look no further.

Adding oats and nuts to the chocolate can help even out those sugar spikes for your kids. In fact, these cookies can even be eaten as a quick breakfast - how cool is that!

Simple recipe - Leftover Easter Egg Cookies

Ingredients

Food you'll need
  • 2 medium-sized ripe bananas
  • 2 cups oats
  • 2 tbsp coconut oil
  • 1 tbsp maple syrup
  • ½ cup chopped nuts
  • ½ Easter egg or handful choc chips

Instructions

How to make it
  1. Tum the oven on to 180 degrees.
  2. Peel the bananas and mash them really well on a plate, using a fork.
  3. Put them into a large bowl, add the oats and mix
  4. Melt the coconut oil in the microwave for 30 seconds to a minute Add the oil, the maple syrup and the chopped nuts to the large bowl. Mix like a mad thing!
  5. Smash your Easter egg hall into small pieces, if using
  6. Pop some baking paper onto a baking tray
  7. Scoop spoonful of the mixture onto the tray and shape them into cookies using your hands or the back of the spoon
  8. Pop some pieces of Easter egg or chocolate chips on top of each cookie.
  9. Bung them into the oven for 15 minutes they should be golden and delicious when cooked
  10. Carefully remove them from the oven and let them cool down before you scoff them out.

This 3 ingredient cookie recipe is super simple - kids from age 2 + should be able to get involved it’s that easy.

Easter Egg chocolate does not always melt great (depending on the brand and how cheap the ingredients are 🙈) so I’ve broken up the chocolate here to use as ‘chips’ rather than to dip the cookies into.

But what I love about this VERY EASY recipe is that you’re giving your child all that extra nutrition from the oats and the banana along with the chocolate.
