Easy 4 ingredient pancakes for Pancake Tuesday
Pancake Tuesday is almost upon us. Are you looking for a simple pancake recipe with ingredients you probably already have hanging around in your cupboard? And one that is on the slightly more healthy side!
You’ve come to the right place. These pancakes use oats as a base so are full of fibre and slow releasing carbs. Great for breakfast on Pancake Tuesday (if you’re organised or wake at the crack of dawn!) or for an after school snack. Theyare an easy recipe for the kids to make - they might need some help with the cooking of them though!
The bananas make them sweeter - especially if you use ripe bananas so not as much maple syrup needed! And eggs add protein for little muscles to grow and full tummies.
Like all pancakes - the possibilities are endless. We always use vanilla essence and cinnamon in our batter but they are not essential. Cacao powder will create chocolate pancakes and spinach or carrot blended in with the batter will up the nutritional value as well!
EASY 4 INGREDIENT PANCAKES FOR PANCAKE TUESDAY.
Ingredients
- 2 bananas
- 2 eggs
- 1/2 tsp. baking powder
- 1/2 cup oats
- Optional extras :
- tsp. vanilla essence
- tsp. cinnamon
- handful blueberrries
- 1 small grated carrot
- small handful spinach
- 2 x tsp. cacao powder
- handful chocolate chips
Instructions
- Blend all 4 ingredients together in a blender and let rest for 10-20 minutes (if you have the time).
- Add in your optional extras (except the chocolate chips and blueberries which should be mixed in with a spoon at the end of blending) and blend again.
- In a pan, melt some butter gently. Put dollops of the mixture on the pan - cook on both sides.
- Serve with :
- chopped fruit - apple, banana, orange, kiwi, pear
- berries - raspberries, strawberries, blueberries
- toasted nuts and seeds - we love toasted flaked almonds
- creme fraiche or sour cream
- drizzle of maple syrup
