Chicken Fajitas

These Chicken Fajitas are the easy for a perfect meal because they’re not just easy, but also healthy and delicious!

Chicken Fajitas

Ingredients

  • 3 bell peppers - assorted colours
  • 2 red onions
  • 3 chicken breasts
  • 1 cup sweetcorn (frozen or tinned)
  • 1 tin black beans
  • olive or rapeseed oil
  • 2 ripe avocados
  • 2 limes
  • large bunch fresh coriander
  • salt and pepper
  • smoked paprika
  • cumin
  • garlic - 2 cloves
  • Serve with:
  • sour cream
  • 6 - 8 wholemeal wraps
  • 200 g cheddar cheese approx

Instructions

  1. Slice the peppers and onions thinly
  2. Slice the chicken into thin strips
  3. In a large bowl, pop your chicken and veggies in.
  4. Chop your garlic finely.
  5. Squeeze one lime. Add the garlic, lime, smoked paprika, cumin and oil to the bowl and mix well with the chicken and veggies
  6. Heat a large pan. Add all contents of the bowl. Stir well.
  7. While the chicken mixture is cooking, prepare your guacamole. Chop the avocados in half, remove the stones and scoop out the flesh.
  8. Mash the avocado. Add the juice of the second lime, some smoked paprika, cumin and salt and pepper to taste.
  9. Pop your guacamole in a clean bowl and add some chopped coriander to garnish
  10. Add the sweetcorn and black beans to the chicken mixture. Season with salt and pepper. Add a little water if the mixture is sticking.
  11. Grate the cheese
  12. Check the chicken is cooked by cutting into a large piece and make sure it’s white all the way throughout.
  13. Assemble the fajitas:
  14. Warm the wraps in the microwave/oven
  15. Pop the chicken mixture into a bowl, pop some chopped coriander on top
  16. Serve with the grated cheese, guacamole and sour cream and allow everyone to help themselves!
